The harvest period, of twenty thousand olive trees of the Fattoria di Volmiano, it should be approximately the first week of November to mid-December. Also in the harvest, are combined traditional and modern methods, in fact are used: the brucatura or hand picking, the traditional method and mechanized picking.

Also in the harvest, are combined traditional and modern methods, in fact are used: the brucatura or hand picking, the traditional method and mechanized picking.
The brucatura, the more traditional method, is used in the first period in which the olives are detached less easily and then to preserve the integrity of the olives, are needed the expert hands of our pickers. Over the years it has spread, the use of facilitators to reduce the use of ladders and the risk that it follows.
At the brucatura, for several years now, we have added the mechanized harvesting only in a second time, when the olives are more mature.
